Fried Rice
Ingredients
1 tbsp coconut oil
Day two leftovers mince, rice, cabbage
Eggs
Whatever veggies you have on hand (frozen works perfectly)
Carrot, broccoli, peas, corn, cauliflower, capsicum, zucchini, mushroom, bok choy, spring onion
Tamari or Soy Sauce
Method
Heat coconut oil in a large pan over medium heat. Add whisked eggs, cook through, then remove and set aside. In the same pan sauté veggies, starting with firmer vegetables first, then add the rest. Crumble in cooked mince, add rice and cabbage, and stir until heated through. Add egg back in, toss in tamari, and it is done. Less than 10 minutes when using leftovers.
Portion Guide
Quantities vary based on your needs. As a general guide aim for around 30g protein per meal.
½ palm lean mince, 2 eggs, 1 handful cooked rice. Roughly 400 kcal.
